We hosted a lovely maid of honor & bride the night before the wedding and the very next night we had a pair of guests in town for a separate wedding.<br /><br />We felt prepared and unprepared at the same time - new sheets, new blankets, new curtains, new rug, new towels - everything clean & set up, with fresh flowers & foliage from around the yard arranged in little mugs & pitchers. It was all so gorgeous! Then we found an extension cord that was a bit loose, an outlet cover that needed to be screwed in, pictures that needed to be hung and a wreath that had been up forever, so we just assumed it was fine when it was actually covered in dust. It's the most wonderful time of the year! Peaches and peaches and peaches!!<br />

We've been a bit behind on processing and putting up fruits and veggies for the year. But, peaches are looking great.<br />
We got three big crates and spent all of Tuesday peeling, cutting, jarring, and eating so many peaches!<br />
We ended up with about two dozen jars of peaches, which will hopefully last us until next season.<br />

It's all worth it. Charlie goes crazy for peaches, and who doesn't love a good fruit pie in the middle of winter? Warm and gooey, with a big scoop of ice cream.. now it's so simple. We really love local and fresh too, so this is our best option.<br />

It is a LOT of work though, so I was more then happy when Mom got home from work to help with the jarring part. My goodness, I could not have finished without her.<br />

So, here's how we do our peaches..<br />
<br />
We look for the best, ones with big bad spots are put aside to be cut up and frozen (or eaten while we work). This just makes it a little bit easier when we're peeling and slicing the peaches we plan to can. You don't want any bruises going into the jar because that can ruin the whole container. You want something that is at a good ripeness, the kind that gives a little when you squeeze it, but doesn't drip juice.<br />

So the best ones are washed, get a small x (let's say quarter size) cut into the bottom, and parboiled..<br />
- This is a ~30 second bath in boiling water then plop them right into an ice bath. Once cooled off (10 seconds) I pull them out and grab one of those flaps from the x we cut in the bottom. This just helps it peel a bit easier. Also, here's where it's important to really have the best, properly ripened peaches. Too ripe and you'll lose a lot of flesh, not ripe enough and it's very hard to peel.<br />

Once they're peeled we check for any bruises and cut out the pit. I like mine to be halved or quarter when I open them up in the winter, so cut to whatever your preference is. You should be left with a big bowl of beautiful peach flesh with no bruises and not pits or stems.<br />
<br />
Toss those peaches into a jar until it is almost full. Now there is a liquid added into the peaches to keep them at the right consistency. If you want no sugar added, you can just fill it up to a half inch below the rim, with water. If you aren't worried about it make a simple syrup and toss that in it's place. This year, for the first time, we made a light simple syrup with local honey. I boiled about 4 cups of water to a cup and a half honey. (occasionally a little less honey, we'll see how it turns out). I love honey, in everything, so hopefully theseare as delicious as usual!<br />
** The simple syrup is to keep the color and consistency of the peaches, adding water will not hurt the peaches, but they may brown a bit more and not quite stay the same. Totally your own preference.<br />

So jars are full and ready to hit the water bath. Mom and I had a disagreement, and met in the middle, at 25 minutes. All the tops popped, no casualties. All in all, a pretty good canning experience.<br />

Here we are right in the middle of a few steps at once, we've got some fresh peaches, peeled peaches, peaches in need of simple syrup, and a few ready to go. It really was a team effort.<br />

The excessive rain and then heat have things blooming early, ducks happily digging in mud, and plants growing out of control. I genuinely can't keep up with pruning and containing my tomato plants. Some are growing into all three surrounding tomato cages! Our little tomatoes, pictured to the left two weeks ago, have a hundred tomatoes on each plant. Which is just about enough for me to snack on while weeding, pruning, and harvesting a few to bring inside. I've also got an abundance of cucumbers flowering and growing all across the garden. It truly is a beautiful thing! I certainly won't complain about too many edibles.</div>

Our ducks, which we purchased in late May are really growing up nicely. They grow much more quickly then chickens, so we were a bit unprepared. They've been outside since week 3, it's certainly warm enough outside for them. They share space with some of our very spoiled chickens in the "little kid house." This is where newbies go and our most spoiled hen, Sully. It's a tough life for her here on our little farm. </div>

Our neighbor purchased a great duck house for our ducks, so once it's fixed up a bit, they'll have their own space and safe house to sleep in. Here they are growing out nicely, and enjoying their kiddie pool.</div>

Besides an abundance of fruits and veggies, some amazing flowers are in full bloom. We've had flowers since april it seems, but these I've been really looking forward to. A lily, calla lily, and morning glory growing in among my tomatoes.</div>

Well, <a href="http://conniemw.blogspot.com/2015/06/incubating-take-one.html">incubating: take one</a> was quite the disappointment, so we tried again. This time we did things a little differently, with dry incubation. Instead of adding water every few days to keep the humidity around 50% we added none, left the vents open (in very humid NJ) and allowed the room to control it. The incubator is kept in the bathroom, at a steady temp inside and outside. Because of this, humidity stayed between 25-30%. </div>

I had 30 eggs inside and 20 made it to lockdown. Pretty good statistics for the obvious infertile eggs and a sizable gap of no electric. Half hatched, 5 others pipped but didn't make it, and the rest didn't make it all the way. I'm pretty happy with these results, we've got another Cream legbar, 2 araucanas, and a few more polish on our chick porch. YUP I've re-named the porch seeing as we've got twenty little chickies running around out there!</div>

So the humans had a 50% hatch rate... My broody hen outside on the other hand had a 100% hatch rate. I gave a first time mom, 8 eggs the same time we started up the incubator. She's a few years old, but hasn't been given the opportunity to hatch eggs, and she did a fantastic job. When I had checked her eggs before I thought only 6/8 were progressing properly, so imagine my surprise when I found seven chicks this morning! Clearly mama hens are better at hatching then we are, even with 3 thermometers and two hygrometers.</div>

It all started with a teeny tiny pip! </div>

So a few weeks ago we bought a nice new incubator, a couple of eggs, and did a bunch of reading on incubating. I was using a method that held temperature and humidity steady until the last few days. I read quite a bit about it, and really thought we were ready. Unfortunately, we only had 6 eggs pip and 4 survived! It seems New Jersey may have a bit too high humidity to really get a proper gauge. So, I won't call it a fail, but out of the 18 that were fertile and growing, we only have a handful to show for it. Sigh..</div>

With their departure, we've welcomed some new little ones this week. Mom was VERY excited to get a few pet ducks for the property again, so we found someone with Indian Runners, and just got them this week. We've got four runners and a girl and boy Rouen. We're undecided about where they'll be (we're still having trouble with the snapper turtles out in the pond), but looking forward to having happy ducks in mud in just a few months. </div>

We also had a visitor, Rachel, stop over this past week. Her sister came as well, and wanted to do a little fishing. This past week Donnie & I found an awesome, new (crazy) chicken lady. Don't get me wrong, I accept the fact I am also a crazy chicken lady, just try owning a few chickens and not becoming one!. So we traveled up to civilization (Mt. Laurel, NJ) and met her. She showed me her fabulous breeding program and her unbelievable cabinet incubator.. which I've since added to my dream list. </div>

While there I got a nice little collection of fertile eggs to hatch. We also had to purchase a new incubator seeing as the old one was ancient and faulty. The new one circulates air for a nice even temp and has an egg turner. It also holds over 30 eggs Quite the chicken upgrade on the farm.<br />

We're adding the following breeds to our chicken coop. Crested cream legbar (blue eggs), Araucana (blue eggs), Tolbunt Polish (fabulous bird), and some silkies, since we lost our last one over the winter. </div>

Don't get me wrong, our windows could be cleaned, floors mopped, and furniture moved around, but it was NOT stay inside weather. So we took to the gardens. With fifteen acres, it's hard to keep everything maintained and well landscaped (sorry dad!). Thinking back on what this property was ELEVEN years ago when we moved in though, I think we've made some great progress! This summers projects include putting in a small patio off the side door, push back some of the overgrown shrubbery back by the pool, and working on our fabulous gardens.<br />

We also spent some time moving the rock garden to prepare for the new patio. We pulled up some vinca vine, it had about 5 years to grow freely, so it's a disaster. We got rid of the rest of the leaves to see what was growing under there, and found all our herbs coming back beautifully! Also some clematis, columbine, and other wonderful flowers popping up.<br />
Donnie had tilled my garden for me, so I planted a few seeds and some of mom's started tomato plants. Mom planted lots of plants of her own, tomatoes, kale, brussels.<br />

In the fall Mom planted and properly covered some garlic. It worked perfectly! We have some beautiful garlic growing here. Soon we'll be pulling it up to have fresh garlic for the first time!</div>

With all of our planting, tilling, and cleaning up, Charlie watched and kept us on our toes. We found which leaves she liked best (the dead ones) and how entertaining it can be to just observe the chickens. Overall, she was a big help. And, we've got our first strawberry out there in April!</div>

Last fall I got a couple frizzles, goofiest little things, and found out 2 were roos, bringing our rooster total to 5! Needless to say we're now down to two. Everyone has found happy new farms to live on/terrorize. Here was one of our own boys, Raptor.</span></div>

<span style="font-size: large;">The human aspect of the farm gained two newbies. In January, Donnie and I got married! So he's the much larger addition to the farm life. Back in November, we welcomed our teeny tiny addition, Charlotte Jones, to the farm. </span><br />

I realize it's been about three month since our last update, basically our whole summer, so let me show you how our summer went..<br />

My sweet little chickens have finally grown up into hens and surprise roosters! To the left is our silly polish, Morty, giving me a completely necessary 8 pm crow. And to the right is some of our odd shaped eggs we've collected. The first few weeks of laying gives all sorts of eggs.<br />

Over the summer we had some changes in the horse line up. Donnie's big sweet American Cream Draft got re-homed to a small time farmer. He'll be used for exactly what he excels at, light driving and a whole lot of standing around. </div>

After he left we found out about one of the horses I used to ride as a teenager. He wasn't able to stay at his current farm and a few things just fell into place, so we took him in. </div>

We survived the fourth of July fireworks somehow.. To the left is Luna hiding under Donnie's legs when all the noise started. We had fireworks all summer really. Hopefully this past weekend was the last. It really gets all he dogs worked up!<br />
To the right is our dog friend Bear. He was one of the pups brought up from the South years ago. He got adopted to family friends Jen& Joe, and as you can see is the happiest puppy in the world now! He and his parents came for a nice patio lunch one afternoon.<br />

Our most recent addition to the farm is three little cochin bantams. They came from a lovely family right down he road. They're about 2 weeks old now and adorable! Fluffy and all white this year. There were two ewes and a little rambunctious ram (check previous posts for tons of just born pictures). </div>

These weren't especially bad, but just like every other lambing season, they figured their way out of the gates and fences to explore all on their own. We had lambs in the front yard for parties, lambs by the chicken coops as I fed, and lambs eating things lambs should not eat (boy was that messy!). Overall, it was lovely to have new life on the farm, yet wonderful to see them go to their new home. This year all three were picked up by a nice woman who does a travelling petting zoo. She enjoys the small, docile breed and wanted to add a few ones to her flock. We are very happy to have them going together, and after weeks of chatting with their new owner and confident they went to a great home! </div>

Our February additions to the flock are growing! At nine weeks now, everyone is outside, with no light, and lots of room to roam. We've given them an unused shed and Donnie's been adding on to their run. These two are our trouble makers. Above, our sicilian buttercup is eyeing me up as I tried to put he back into the run. To the right is Morty, our polish (hen) sunbathing, clearly unaffected by my arrival. A few of these hens are for sale since we just do not need 15 new hens!<br />

A terrible picture of our asparagus we cut this weekend. Any tough ends went to some very eager hens. Now we'll just wait patiently for new stalks to pop up where we cut these down. One already is from the cut I did last week. It's much larger too, SO happy we're finally doing the asparagus right!<br />

Strawberries are flowering : ) We've got wild and planted strawberries all over the place in our yard. These are right next to the pea box. Hopefully, since its all fenced off those pain in the butt rabbits and deer won't get them this year!<br />

Just a few more days and we will have ripe, red strawberries all over the place. What better way to take a break than snacking on strawberries fresh of the plant?</div>

April fools day was quite exciting for us. While they are almost a week late, we finally had our first lamb! Mom was still at work, and I was going out to see how everyone was doing. Nina was laying next to this little long legged fur baby. Our first little ram lamb! </div>

She's REALLY loud, and was not being cleaned or fed at all. So we stepped in to clean, warm her up and show her where to get the food. It took a little coaxing, and I had to squirt her in the face with milk before she finally latched on. Silly lamb was trying to suckle from my fingers. We'll keep an extra close eye on her, just to make sure she's nice and healthy. While being cute and loud, she's also wiggly. It was almost impossible to get a picture of her this time. The one of her lying down on the left was a small fall. She was back up and moving around within seconds. Maybe we'll name her wild thing.<br />

I was trying to get a few of their enormous bellies, but as soon as they learned the cookies were gone, everyone scattered. This picture was sort of funny though, everyone looking in different directions. From the front we've got Rain (drop), Olivia, Nina's butt, and all the way in the back is Mellie. Mom was quite sure we'd have babies in all this rain, but still not lambs. </div>

We wandered over to give some lunch to the hens and silkies. Donnie's little black hen wanted a closer look before we started feeding them their snacks. She's such a silly hen. </div>

I assumed our next post would be full of little lamb photos.. Unfortunately, we are still waiting. This Thursday is the due date estimation, and don't worry I have informed the girls of this. I'm not sure they were all that worried about it as they chomped on hay and waited for more grain, spoiled brats.<br />

While we haven't had any new babies born we have had some progress with our few warm days in the past month or so. Thank goodness it's been starting to look more like spring, minus today of course. </div>

So, we have added a few new chickens to our flock our the last few months. Two polish will stay and a couple of silkies to go along with our current few. We decided to add some coop space, and in the words of my old swim coach, "go big or go home." We've done just that by repurposing an old shed that was left empty. With the help of a few Amish we got it into a great place near all our other chickens, and now the work inside is starting. Putting up nesting boxes, fixing up some good roosts, and closing off half to keep two separate groups in there. Here is Donnie and Mom checking out whats going on in there before we made any decisions. </div>

Mom got some great work done outside. Peas are planted, tons of plants are started inside, so she (and all of the chickens) were turning over some of the beds outside. We've been moving in some of that great aged manure into the garden areas so we have excellent soil to grow in.</div>

Our chickens have slowly been starting back up with their laying. We've got a few mix girls that were born here this past spring. They are both black with hints of blue or green. The one, I swear shines a little purple! She's beautiful. Well they are Ameraucana x brown layers so they have olive eggs. Our first olive eggs! I got a picture of one compared to one of our regular tinted eggs. You can really tell the difference against this one.<br />

Hopefully by spring we will be back in full egg laying mode, right now it takes a few days to lay a dozen, but soon we'll get a dozen or more a day! It's about time, I've been threatening to turn them into stew for months, unfortunately they know I'm all talk..<br />

This little girl is our AmeraucanaX Cuckoo Maran mix. She has some purple, blue, and green in her feathers. It's easier to see in the sun, but she just refused to pose properly for me in the sun..<br />

Got a little work done these past few days, you know, because it's necessary on a farm, especially with this "snow storm" coming. Cleaning or filling waters, fixing electric, checking buildings, chopping more wood, and moving over hay. It's not so fun in the snow and ice, but the our sweet animals make it a little less awful. Phantom was being nosey, Beau got his blanket off to roll around, and Remy was watching our every move. So I got a few pictures, while poor Donnie did most of the manual labor.. thank goodness we have him! I couldn't lift some of these things anway.. The extra water trough we have in the sheep pen had frozen completely solid. I couldn't believe it! So Donnie helped me out, flipping it over and cleaning it, clearly it hadn't been touched in quiet a while. Even more amusing, that huge ice block is still there. Has anyone else had this problem? Just large chunks of ice around the property? Our chickens get water in black rubber bowls that empty easily, but they just keep freezing. So now we have about twelve perfect ice circles from the past week out there. Isn't it going to get up above freezing soon?!</div>

Not at all because of the super bowl, but my quarter century mark! This year, I got the best sort of gift, new silkies : ) Yes, that's right, some chickens for my birthday, but these four are absolutely beautiful and just full of personality. First up, here I am holding Sundance and Cassidy.. We left behind Butch, don't worry though, he has a whole harem of ladies. These are splash silkies, which we have never had before. We'll post more close ups of these two, they are absolutely beautiful, and even more social than some of our other birds. </div>

During this time I had realized I had found another "crazy chicken lady" just like us! She had mentioned her wry neck buff silkie, Maisy. And, during our conversation she had mentioned we could take her and her pal Lily if we wanted to. Well, not wanting to get in over our heads we talked it out quite a bit.. and big surprise, got there with enough crates to bring home all four, you know, just in case. Honestly though, getting there and meeting them, it was hard not to love them! Maisy was obviously nervous, which causes her to "stargaze" ( the perfect name for it) When she does this, her head goes back, I mean all the way against her back. It's weird to watch up she isn't uncomfortable at all and still completely independent. If you haven't realized yet, we are suckers for those "special" pets. So, we obviously brought her home too. Yes, four new silkies to add to our flock. These four will go with Nugget, Smokey, and Boo. We intend to make a nice new silkie container for them with a nice new run next to the garden. </div>

For a while we had three chicks on the side porch. These were the ones born in October. Sweetest little things, three was the perfect number to socialize and spoil. Here they are staying warm in Donnie's enormous shoe. As you can see you can fit at least three in one shoe. </div>

We try to make sure we keep a good balance of fun and work around here. Not all of us are able to do it.. but, we've had a lot of down time down on the Delaware Bay. My aunt has a nice boat in during the summer, so we try to get there whenever we can. It's beautiful and calm down there. Days it's not too windy we get out to crab or fish. We've mastered our maryland style crab recipe.<br />

Right around Halloween we had a gathering at the farm with friends and family. We made a nice dinner and all sat around chatting until pumpkin carving began. Then things got pretty serious, which is obvious from these masterpiece jack-o-lanterns. </div>

I've also had a little bit of time to ride this beautiful boy. He's such a sweet horse and with time has come to trust me enough to jump on him bareback! We were all the way out in the back of the property here. He has become a very nice addition to our ponies.</div>

Last but not least of our summer fun, was Thanksgiving. We have a few regular pictures of family and the big meal, but I figured this one was the best. Mom made the pumpkin pie the night before so there was less work the next morning. Unfortunately for her, she finished late at night and we forgot to put it up high enough. Our big white fluffy, Christian, figured this out and took full advantage. He ate every drop of that filling! I'm sure it was just too delicious<br />

We are REALLY looking forward to getting back outside once it's warmer. It's just no fun to try to play outside during this cold we've had. </div>
